Croque Madame
This is another treat from France. They really know their food.
Ingredients:
- 8 slices sourdough bread
- 1/2 cup butter at room temperature
- 4 slices of cooked ham
- 4 slices of Gruyere cheese
- 4 large eggs
Directions:
- Use half of the butter to spread on each slice of bread.
- Pile a slice of ham and cheese on top of the bread and create sandwiches using the remaining bread slices.
- Fry the sandwiches in a skillet. The cheese should be melted and the bread should be browned.
Prepare the eggs:
- Place enough water in a pan to cover the eggs and add a tsp of olive oil. Boil the water, then lower the temperature to a simmer.
- Crack the eggs and slide carefully into the water.
- Turn off the stove and let the eggs sit until poached – 3 to 4 minutes. Use a slotted spoon to remove the poached eggs to a plate.
- Melt the remaining half of the butter and add the parsley.
- Transfer one sandwich each to 4 serving plates. Top the sandwich with one poached egg.
- Lightly pour the butter mix over the sandwiches. Serve while hot.
