Breakfast Frittata

Breakfast Frittata

Fix this when you have a hungry crowd.

 Ingredients:

  • 6 slices of chopped bacon
  • 1 cup diced green pepper
  • Salt and pepper to taste
  • 1 cup diced cooked potatoes
  • 10 beaten eggs
  • 2 oz. feta cheese

Directions:

  1. Fry the bacon in a skillet.
  2. When bacon is crispy, mix in the green pepper.
  3. Stir for approximately 3 minutes.
  4. Remove skillet from stove and drain any excess fat.
  5. Add the salt and pepper.
  6. Place skillet back on stove and mix in the diced potatoes.
  7. Stir for approximately 2 minutes.
  8. Add the eggs.
  9. Stir for 5 minutes. Eggs should still be soft.
  10. Top frittata with the feta cheese. Preheat the broiler.
  11. Broil frittatas for 5 minutes.
