Breakfast Enchiladas

There’s no reason not to enjoy a delicious enchilada for breakfast. 


  1. 1 lb. mild ground pork sausage
  2. 3 tbsp sweet butter
  3. 4 sliced scallions
  4. 3 tbsp chopped cilantro
  5. 14 large eggs
  6. Salt and pepper to taste
  7. 8 flour tortillas
  8. 4 oz. shredded Monterey Jack cheese


  1. Crumble and fry the sausage in a skillet.
  2. Drain on a paper towel. Use another skillet to melt the butter.
  3. Add the scallions, eggs, salt and pepper and cook for 5 minutes.
  4. Place the mixture in a bowl and mix in the sausage and 1 cup of cheese sauce (see recipe below).
  5. Divide the mix onto each tortilla.
  6. Roll up the tortilla and transfer them to a buttered 9 x 13 baking dish.
  7. Top with the rest of the cheese sauce and the Monterey Jack.
  8. Bake for half an hour at 350 degrees. Serve with toppings.
