Breakfast Enchiladas
There’s no reason not to enjoy a delicious enchilada for breakfast.
Ingredients:
- 1 lb. mild ground pork sausage
- 3 tbsp sweet butter
- 4 sliced scallions
- 3 tbsp chopped cilantro
- 14 large eggs
- Salt and pepper to taste
- 8 flour tortillas
- 4 oz. shredded Monterey Jack cheese
Directions:
- Crumble and fry the sausage in a skillet.
- Drain on a paper towel. Use another skillet to melt the butter.
- Add the scallions, eggs, salt and pepper and cook for 5 minutes.
- Place the mixture in a bowl and mix in the sausage and 1 cup of cheese sauce (see recipe below).
- Divide the mix onto each tortilla.
- Roll up the tortilla and transfer them to a buttered 9 x 13 baking dish.
- Top with the rest of the cheese sauce and the Monterey Jack.
- Bake for half an hour at 350 degrees. Serve with toppings.
