Ingredients for Yellow Pickled Eggs

  • 12 eggs
  • 1 medium onion, thinly sliced
  • ¾ cup water
  • 1 cup white sugar
  • 1 ¼ cups white vinegar
  • 2 teaspoons salt
  • 1 teaspoon dried dill weed
  • ¼ teaspoon garlic powder
  • ½ teaspoon mustard seed

Directions for Yellow Pickled Eggs

  1. Place eggs in a large pot and fill with enough water to cover. Bring to a boil, then cover and remove from heat. Let stand 10 minutes.
  2. Cool under running water, and remove shells. Place hard-cooked eggs in a large jar.
  3. In a saucepan, combine the onion, water, sugar, and vinegar. Stir in salt, dill, garlic powder, and mustard seed.
  4. Bring to a boil, and then simmer over low heat for 5 to 7 minutes. Pour over the eggs in the jar. Cover and refrigerate for at least 4 days. The eggs will be yellow!
