Western Omelet

This is a favorite omelet. Cut the omelet in two to create sandwiches, if desired.


  • 2 tbsp sweet butter 6 large eggs
  • 1/4 cup chopped green pepper
  • 1/3 cup chopped scallions (use an onion if scallions not available) 3/4 cup milk 3/4 cup chopped ham
  • Salt and pepper to taste


  1. Melt the butter in a skillet.
  2. Whisk together the eggs with all of the other ingredients. Pour egg mix into skillet.
  3. Cook one side, flip, and cook the other. Don’t overcook the omelet.
