Filled Crepes
Crepes are lighter than pancakes and so delicious. You can experiment with the filling.
Ingredients:
- 1 cup flour
- 1 cup milk
- ¼ cup heavy cream
- 1/2 tsp baking powder
- 1/4 cup sweet butter
- ½ cup sliced mushrooms
- 1 chopped onion
- 1 tablespoon flour
- 1 cup cream
- 1 cup diced ham
- Salt and pepper to taste
Directions:
- Mix together the milk, flour, baking powder and chill overnight. Melt half of the butter in a crepe pan. Add ¼ cup of the batter.
- Turn and rotate the crepe pan. Cook until one side is a golden brown, then flip and cook the other side.
- Repeat until batter is used up.
- Melt the remaining butter and saute the mushrooms and the onions. Mix in the ham, and add the flour and the milk to thicken the filling.
- Divide the filling between the crepes. Roll the crepe closed.
