Filled Crepes

Crepes are lighter than pancakes and so delicious. You can experiment with the filling. 


  • 1 cup flour
  • 1 cup milk
  • ¼ cup heavy cream
  • 1/2 tsp baking powder
  • 1/4 cup sweet butter
  • ½ cup sliced mushrooms
  • 1 chopped onion
  • 1 tablespoon flour
  • 1 cup cream
  • 1 cup diced ham
  • Salt and pepper to taste


  1. Mix together the milk, flour, baking powder and chill overnight. Melt half of the butter in a crepe pan. Add ¼ cup of the batter.
  2. Turn and rotate the crepe pan. Cook until one side is a golden brown, then flip and cook the other side.
  3. Repeat until batter is used up.
  4. Melt the remaining butter and saute the mushrooms and the onions. Mix in the ham, and add the flour and the milk to thicken the filling.
  5. Divide the filling between the crepes. Roll the crepe closed.
