Eggs essen
Ingredients
- Olive oil 4 Tbsp
- Onion 1, medium-sized, peeled and finely chopped
- Potatoes 2, medium-sized, peeled and diced
- Ham 55 g (2 oz), sliced Green capsicum
- (bell pepper) 1, small, white pith
- removed, seeded and finely chopped
- Canned peeled
- tomatoes 230 g (71/2 oz), drained
- and chopped
- Frankfurters 8, cut into 1-cm (1/2-in)
- slices
- Dried basil 1/4 tsp
- Eggs 6
- Salt 1 tsp
- Ground black
- pepper 1/2 tsp
A delicious combination of capsicum, onion, tomatoes, frankfurters and eggs, Eggs Essen is a colourful and substantial meal in itself.
Serves 4–6
Method
- Preheat oven to 230°C (450°F).
- In a pan, heat oil over moderate heat. Add onion and potatoes and cook, stirring occasionally, for 5 minutes.
- Add ham, capsicum, tomatoes, frankfurters and basil. Cook, stirring occasionally, for 15 minutes.
- Remove pan from heat and transfer mixture into a medium- sized ovenproof dish. Smooth surface with a knife.
- Break eggs on top of mixture and sprinkle with salt and pepper.
- Place dish in oven and bake for 8–10 minutes or until egg whites are set.
- Remove from oven and serve immediately.
